Alien's Cooking ~Steamed Pork Buns ~
Well...It's me, Alien.
Hot and melty.
It's been a while since Alien posted Alien's cooking last time.
Today, Alien introduce Alien's special recipe of Steam Pork Buns. Alien wanted to make good ones as The "551 Horai."
(*The 551 Horai is a famous to-go dim sum place in Osaka, Japan. Alien recommed to get their steam pork buns if you have a chance to visit Osaka area. Really yummy!)
Let's make filling first.
Recipe for filling (for 6 buns)
1 Medium Onion (chopped)
1 Tablespoon Lard
1 Piece of Dried Shiitake Mushroom (chopped)
★1 Tablespoon Sugar
★1Teaspoon Honey
★2 Tablespoons Soy sauce
★2 Tablespoons Oyster sauce
★100cc Water (100cc including water to moisture a dried shiitake mushroom).
2 Tablespoon All-Purpose Flour, mixed with 50cc water
1/3 pound Ground Pork
☆1/2 teaspoon Ginger (grated)
☆1 Tablespoon Sake
☆2 Teaspoons Sesame oil
Let's chop an onion first.
Alien can use knifes!
Onion, chopped.
Alien made it.
Let's stir-fly the onion with lard. It will make filling yummy.
Alien could buy lard in an American glossary store.
Use veg oil is you don't have lard.
Stir-fly!
Alien can use pans.
Next, let's chop a moistured dried shiitake mushroom.
Don't throw up the water. Alien will add the water and shiitake mushroom to the onion.
You can make filling without shiitake mushroom if it is hard to get.
Next step is seasoning!
Alien could buy all the condiments in an American supermarket.
Add all the condiments with★ to the stir-fried onion and shiitake mushroom.
Yes it is a lot of water, but don't worry.
Here is Alien's secret ingredient.
Flour and water mix.
Stop hearing the pan and add the flour-water mix.
Heart the pan when you're done with stiring the filling (to avoid lumps), keep heating till the filling gets thicken.
Add more flour-water mix till the filling get thicken like this.
It will be difficult to wrap if the filling is too loose. Make it thick like jelly.
Cool it down. Alien will add this to pork later.
Alien make dough while cooling the filling down.
Recipe for dough (6 buns):
9 ounces All-purpose Flour
2 Teaspoons Dry Yeast
3 Tablespoons Sugar
2 Teaspoons Honey
1 Tablespoon Lard
140 cc Water
First, quick-rise dry yeast.
Put 50cc (of 140cc) water in a container. Make the water hot as nice hot shower.
Add 1 Tablespoon (of 3 Tablespoons) sugar to the warm water.
Add 2 teaspoons dry yeast and mix it well.
10 minutes later...
It's rising!
Yeasts are living.
Mix flour, sugar (2 Tablespoons), honey, and lard in a bowl.
Don't add water yet.
Add the quick-raisen yeast.
Let's knead the dough!
Add water gradually after yeast was evenly mixed.
It comes together.
Alien want to make it softer and smoother.
Alien add water a bit and keep kneading the dough.
Done.
Knead it till it gets as soft as ear lobe.
You don't need to use all the water if the dough gets soft and moist enough. You can put some additional water if your dough is not soft and moist enough.
Then let the dough rise.
Bowl-boil the dough.
The water should't be too hot. Keep it as hot as nice hot shower.
Let's finish filling while the dough is rising.
Add the condiments with ☆ to ground pork and mix it well.
Alien bought those condiments in an Asian supermarket.
Mix the pork with the cooled onion filling well.
Hooo!
Done.
More than half of the filling is onion.
Well, let's look at the dough. It was bowl-boiled for 40 minutes.
The dough doubled its size. Well done.
Punch out the air from the dough and divide it into six pieces.
It is hard to equally divide.
Streach a dough and put filling.
The center should remain thick. Make the margin thin.
Pinch two edges and fold the filling. Keep doing the same for other edges.
...Done.
It is difficult to make beautiful folds. Well, it's okay siince it is a proof of hand-made buns.
Make sure to close the bun.
Alien put a piece of parchment paper under the bun.
Let's put the buns on Chinese steaming baskets.
Make enough space for the buns. They will fluff up.
Start with cold water, steam them at high heat for 20 minutes.
Switch the baskets to evenly steam the buns.
Done.
Hot and fluffy. Looks yummy.

Caution, it is very hot.

The "551" stands for "Here is No. 1" in Japanese. Alien think Alien's special recipe can be "552" (Here is No. 2).
